Mango and Ginger Soup

(serves 4 or multiple shot glasses)

  • 2 mangoes
  • 1 onion
  • 1 cup cold water
  • ¼ tsp Scotch bonnet or other pepper (to taste)
  • 1 lime
  • 1tsp grated or minced ginger
  • Salt and pepper to taste
  • Peel, de-stone and cut up mangoes, chop onion, Scotch bonnet and juice lime.

Puree all ingredients together gradually adding water till you have the required consistency.

Chill and serve.
